This study aims to examine the effects of various drying methods, namely vacuum freeze drying (VFD), vacuum drying (VD), hot air drying (HAD), sun drying (SD), and air-impingement jet drying (AIJD), on <i>in vitro</i> and <i>in vivo</i> bioaccessibility of red radish anthocyanins.
