Deoxynivalenol (DON), primarily generated by <i>Fusarium</i> species, often exists in agricultural products. It can be transformed to 3-<i>epi</i>-deoxynivalenol (3-<i>epi</i>-DON), with a relatively low toxicity, via two steps.
