We have developed a novel bio-tofu, made from mixed soy and cow milk (MSCM), using <i>Lactobacillus helveticus</i> MB2-1 and <i>Lactobacillus plantarum</i> B1-6 incorporated with microbial transglutaminase (MTGase) as coagulant.
