Milk spoilage is caused by the presence of proteolytic enzymes produced by <i>Pseudomonas</i> spp. during storage at low temperatures. The aim of this study was to identify <i>Pseudomonas</i> spp. in raw milk and investigate their associated proteolytic properties at low temperatures.
