Yeast assimilable nitrogen (YAN) is essential for yeast growth and metabolism during apple (<i>Malus</i> x <i>domestica</i> Borkh.) cider fermentation. YAN concentration and composition can impact cider fermentation kinetics and the formation of volatile aroma compounds by yeast.
