<i>Saccharomyces cerevisiae</i> has the capability of fermenting sugar to produce concentrations of ethanol that are toxic to most organisms. Other <i>Saccharomyces</i> species also have a strong fermentative capacity, but some are specialized to low temperatures, whereas <i>S. cerevisiae</i> is the most thermotolerant.
