Peanuts with fungal contamination may contain aflatoxin, a highly carcinogenic substance. We propose the use of hyperspectral imaging to quickly and noninvasively identify fungi-contaminated peanuts. The spectral data and spatial information of hyperspectral images were exploited to improve identification accuracy.
