Lebanese Population Exposure to Trace Elements via White Bread Consumption.

ABSTRACT: The objective of this study was to assess Lebanese population exposure to trace elements (TEs) via white pita consumption. A survey of white pita consumption was achieved among one thousand Lebanese individuals, grouped into adults (above 15 years old, men, and women) and young people (6-9 and 10-14 years old). The most consumed pita brands, labeled B1, B2, and B3, were selected. Levels of TEs (i.e., As, Cd, Co, Cr, Hg, Ni, and Pb) in B1, B2, B3 pitas were measured. The highest contents of TEs in pitas were: Ni (1292 µg/kg) and Co (91 µg/kg) in B1; As (400 µg/kg) and Cd (< 15 µg/kg) in B2; Cr (363 µg/kg), Pb (260 µg/kg), and Hg (0.89 µg/kg) in B3. The pita brand B3 was the source of the highest TEs exposure, except for Ni for which it was B1. Daily exposures to TEs due to the fact of pita consumption were compared to safety levels. There were no safety concerns for Hg, Cd, Cr or Co (except the 95th percentile of 6-9 years old). An excess of the Ni tolerable daily intake was observed for the most exposed populations. The very low margins of exposure for As and Pb suggest a worrying risk for the Lebanese population.

Project description:Aquaculture contributes to the global animal protein supply and the prevention of malnutrition and diet-related diseases (FAO (Food and Agriculture Organization of the United Nations); Fiorella et al., 2021). In particular, fish is a significant source of animal protein, fatty acids (e.g., docosahexaenoic acid, eicosapentaenoic acid), vitamins, and essential trace elements in the human diet. Nonetheless, fish bioaccumulates metals from their diet and habitat. This data article includes information on the concentrations of 4 essential and 4 non-essential trace elements in cultured rainbow trout (Oncorhynchus mykiss) and the human health risks through fish consumption in the adult population. Concentrations of four essential (Cr, Cu, Ni, and Zn) and four non-essential (As, Cd, Pb, and Hg) elements were quantified in ninety-one O. mykiss samples from an in-door production system. Total mercury (THg) levels in samples were determined by AAS, and other analyzed trace elements were measured by ICP-OES after microwave-assisted acid digestion. The highest concentrations of metals/metalloid (mg/kg wet weight) in fish muscle were Cr (0.44), Cu (4.21), Ni (1.01), As (0.47), Cd (0.045), Pb (0.65), THg (0.029), and Zn (6.21). The average concentrations of Cr and Pb exceeded their respective maximum limit. In most cases, median metal concentrations significantly (p < 0.05) differed across the fish size groups (small: 264-295 mm; medium: 300-395 mm; and large: 400-552 mm). The median concentrations of Cd, Zn, and THg in the large size group differed significantly (p < 0.05) between genders. The estimated weekly intake values of quantified elements from muscle were below the provisional tolerable weekly intakes. Non-carcinogenic risk assessment in adult consumers, being below one (THQ ≤ 1; and TTHQ ≤ 1), indicated an insignificant health hazard. The estimated incremental and cumulative cancer risks in the adult class through Cr, As, Ni, and Pb exposure were greater than the benchmark (10-5). Accordingly, high dietary intake of metals/metalloid from cultured O. mykiss posed a risk of carcinogenesis in the adult risk class.

Project description:BackgroundArsenicals (roxarsone and nitarsone) used in poultry production likely increase inorganic arsenic (iAs), monomethylarsonic acid (MMA), dimethylarsinic acid (DMA), and roxarsone or nitarsone concentrations in poultry meat. However, the association between poultry intake and exposure to these arsenic species, as reflected in elevated urinary arsenic concentrations, is unknown.ObjectivesOur aim was to evaluate the association between 24-hr dietary recall of poultry consumption and arsenic exposure in the U.S. population. We hypothesized first, that poultry intake would be associated with higher urine arsenic concentrations and second, that the association between turkey intake and increased urine arsenic concentrations would be modified by season, reflecting seasonal use of nitarsone.MethodsWe evaluated 3,329 participants ? 6 years old from the 2003-2010 National Health and Nutrition Examination Survey (NHANES) with urine arsenic available and undetectable urine arsenobetaine levels. Geometric mean ratios (GMR) of urine total arsenic and DMA were compared across increasing levels of poultry intake.ResultsAfter adjustment, participants in the highest quartile of poultry consumption had urine total arsenic 1.12 (95% CI: 1.04, 1.22) and DMA 1.13 (95% CI: 1.06, 1.20) times higher than nonconsumers. During the fall/winter, participants in the highest quartile of turkey intake had urine total arsenic and DMA 1.17 (95% CI: 0.99, 1.39; p-trend = 0.02) and 1.13 (95% CI: 0.99, 1.30; p-trend = 0.03) times higher, respectively, than nonconsumers. Consumption of turkey during the past 24 hr was not associated with total arsenic or DMA during the spring/summer.ConclusionsPoultry intake was associated with increased urine total arsenic and DMA in NHANES 2003-2010, reflecting arsenic exposure.
