The Impact of Grouping on Skin Lesions and Meat Quality of Pig Carcasses.

ABSTRACT: In practice, unfamiliar pigs are frequently mixed prior to loading in order to obtain groups of uniform weight and to adjust the group size to the dimensions of the trailer compartments. Mixing pigs induces aggressive interactions to establish a new social rank. Fighting results in skin lesions and pre-slaughter stress and, in turn, reduced meat quality. A study was performed to compare the effect of non-regrouping and regrouping at fattening (at 80 kg and kept till slaughter), loading and lairage. A total of 1332 pigs were included over 30 transports from one pig farm to one slaughterhouse (110 km). Skin lesions were determined on 1314 carcasses. Meat quality was measured on 620 pigs. The non-regrouped pigs had fewer skin lesions and better meat quality than the pigs regrouped at loading or in lairage. Pigs mixed at 80 kg at the farm had, in general, a comparable amount of skin lesions and comparable meat quality as the non-mixed group. If mixing is unavoidable, due to large within-group weight variations, mixing at 80 kg can be an alternative to reduce skin lesions at slaughter and to optimise meat quality.

Project description:BackgroundCurrently, meat cut traits are integrated in pig breeding objectives to gain extra profit. However, little is known about the heritability of meat cut proportions (MCP) and their correlations with other traits. The aims of this study were to assess the heritability and genetic correlation of MCP with carcass and meat quality traits using single nucleotide polymorphism chips and conduct a genome-wide association study (GWAS) to identify candidate genes for MCP.ResultsSeventeen MCP, 12 carcass, and seven meat quality traits were measured in 2012 pigs from four populations (Landrace; Yorkshire; Landrace and Yorkshire hybrid pigs; Duroc, and Landrace and Yorkshire hybrid pigs). Estimates of the heritability for MCP ranged from 0.10 to 0.55, with most estimates being moderate to high and highly consistent across populations. In the combined population, the heritability estimates for the proportions of scapula bone, loin, back fat, leg bones, and boneless picnic shoulder were 0.44 ± 0.04, 0.36 ± 0.04, 0.44 ± 0.04, 0.38 ± 0.04, and 0.39 ± 0.04, respectively. Proportion of middle cuts was genetically significantly positively correlated with intramuscular fat content and backfat depth. Proportion of ribs was genetically positively correlated with carcass oblique length and straight length (0.35 ± 0.08 to 0.45 ± 0.07) and negatively correlated with backfat depth (- 0.26 ± 0.10 to - 0.45 ± 0.10). However, weak or nonsignificant genetic correlations were observed between most MCP, indicating their independence. Twenty-eight quantitative trait loci (QTL) for MCP were detected by GWAS, and 24 new candidate genes related to MCP were identified, which are involved with growth, height, and skeletal development. Most importantly, we found that the development of the bones in different parts of the body may be regulated by different genes, among which HMGA1 may be the strongest candidate gene affecting forelimb bone development. Moreover, as previously shown, VRTN is a causal gene affecting vertebra number, and BMP2 may be the strongest candidate gene affecting hindlimb bone development.ConclusionsOur results indicate that breeding programs for MCP have the potential to enhance carcass composition by increasing the proportion of expensive cuts and decreasing the proportion of inexpensive cuts. Since MCP are post-slaughter traits, the QTL and candidate genes related to these traits can be used for marker-assisted and genomic selection.

Project description:Pig carcasses, as human proxies, were placed on the seabed at a depth of 300 m, in the Strait of Georgia and observed continuously by a remotely operated camera and instruments. Two carcasses were deployed in spring and two in fall utilizing Ocean Network Canada's Victoria Experimental Network under the Sea (formerly VENUS) observatory. A trial experiment showed that bluntnose sixgill sharks could rapidly devour a carcass so a platform was designed which held two matched carcasses, one fully exposed, the other covered in a barred cage to protect it from sharks, while still allowing invertebrates and smaller vertebrates access. The carcasses were deployed under a frame which supported a video camera, and instruments which recorded oxygen, temperature, salinity, density, pressure, conductivity, sound speed and turbidity at per minute intervals. The spring exposed carcass was briefly fed upon by sharks, but they were inefficient feeders and lost interest after a few bites. Immediately after deployment, all carcasses, in both spring and fall, were very rapidly covered in vast numbers of lyssianassid amphipods. These skeletonized the carcasses by Day 3 in fall and Day 4 in spring. A dramatic, very localized drop in dissolved oxygen levels occurred in fall, exactly coinciding with the presence of the amphipods. Oxygen levels returned to normal once the amphipods dispersed. Either the physical presence of the amphipods or the sudden draw down of oxygen during their tenure, excluded other fauna. The amphipods fed from the inside out, removing the skin last. After the amphipods had receded, other fauna colonized such as spot shrimp and a few Dungeness crabs but by this time, all soft tissue had been removed. The amphipod activity caused major bioturbation in the local area and possible oxygen depletion. The spring deployment carcasses became covered in silt and a black film formed on them and on the silt above them whereas the fall bones remained uncovered and hence continued to be attractive to large numbers of spot shrimp. The carcass remains were recovered after 166 and 134 days respectively for further study.
