Optimization of the extrusion process through response surface methodology for improvement in functional and nutritional properties of soybean hull.

ABSTRACT: Soybean hull as a rich and inexpensive source of dietary fiber and because of its health properties, is a good option for supplying dietary fiber to various food industries. Optimization of the extrusion process and the effects of its variables [Feed moisture (35-45%), screw speed (160-200 rpm), and temperature (75-95 °C)] were investigated on the structural, nutritional, and functional properties of soybean hull by response surface methodology. Based on response surface analysis, the maximum soluble dietary fiber content and water absorption index in addition to the minimum specific mechanical energy and anti-nutritional composition of tannin were obtained at a feed moisture content of 42.58%, screw speed of 182.46 rpm, and temperature of 87.43 °C. The extrusion process also increased the rate of swelling capacity, solubility index, yellowness, and redness of the samples. It also reduced the oil absorption index and lightness in comparison with the control. The FTIR spectroscopy did not show a new functional group and the urease test (trypsin inhibitor activity) was negative in the extruded samples.

Project description:The present study was carried out to reduce the size of silver nanoparticles (AgNPs) by optimizing physico-chemical conditions of the Aspergillus fumigatus BTCB10 growth based on central composite design (CCD) through response surface methodology (RSM). Variables such as a concentration of silver nitrate (mM), NaCl (%) and the wet weight of biomass (g) were controlled to produce spherical, monodispersed particles of 33.23 nm size, observing 78.7% reduction in size as compared to the initially obtained size that was equal to 356 nm. The obtained AgNPs exhibited negative zeta potential of -9.91 mV with a peak at 420 nm in the UV-Vis range whereas Fourier Transform Infrared (FT-IR) analysis identified O-H, C = C, C ≡ C, C-Br and C-Cl groups attached as capping agents. After conducting RSM experiments, a high nitrate reductase activity value of 179.15 nmol/h/ml was obtained; thus indicating a likely correlation between enzyme production and AgNPs synthesis. The F-value (significant at 3.91), non-significant lack of fit and determination coefficient (R2 = 0.7786) is representative of the good relation between the predicted values of response. Project description:This study optimizes the 3D extrusion printing parameters-water-to-flour ratio (X1), temperature (X2), and printing speed (X3)-for raw (RFB) and extruded (EFB) dehulled Andean fava bean flours to maximize print quality and minimize structural defects. A 23 central composite design combined with response surface methodology (RSM) was used to identify the optimal conditions for achieving geometric precision, surface homogeneity, and textural stability. Physicochemical analyses showed that extrusion cooking substantially modified the composition and rheology of the flour. Compared with RFB, EFB exhibited lower protein and fiber contents, a higher proportion of digestible carbohydrates, and reduced rheological parameters (τ0, K, G', G″), which facilitated printing. The evaluation of different parameter combinations revealed notable differences between the two flours, with X1 and X2 exerting the greatest influence on print quality. For RFB, the highest desirability (0.853) was achieved at X1 = 0.806, X2 = 23.18 °C, and X3 = 2470.5 mm/min, yielding more uniform and firmer printed structures. In contrast, EFB reached a desirability of 0.844 at X1 = 1.66 °C, X2 = 56.82 °C, and X3 = 1505.43 mm/min, indicating its outstanding geometric accuracy and robustness. In conclusion, raw flour requires higher hydration and lower temperatures to prevent excessive viscosity. In contrast, extruded flour benefits from low water and high temperatures to achieve stable structures and firm textures. These findings demonstrate the feasibility of using Andean fava bean flour in 3D food printing to create nutrient-dense, functional foods with improved printability. This work offers practical applications for developing personalized foods-such as customized meals for individuals with specific dietary requirements-while contributing to sustainable and secure food production. Future research should address long-term storage, post-printing drying methods, and scaling production.
