The objective of this study was to compare the physicochemical, enzymatic, and metabolic properties of two control wheat malts imported from Germany and the US to those of malts made from three Korean wheat varieties: <i>Triticum</i><i>aestivum</i> L., var. <i>Anzunbaengi</i>, <i>Jokyung</i>, and <i>Keumkang</i>.
