The effective utilization of okara (soybean residue) has become a considerable challenge in recent years. In this paper, the potential advantages of <i>β</i>-glucosidase production from okara fermented by <i>Kluyveromyces marxianus</i> were evaluated and the properties of the <i>β</i>-glucosidase were also characterized.
