Dataset on viscosity and starch polymer properties to predict texture through modeling.

ABSTRACT: Accurate classification tool for screening varieties with superior eating and cooking quality based on its pasting and starch structure properties is in demand to satisfy both consumers' and farmers' need. Here we showed the data related to the article entitled "Deploying viscosity and starch polymer properties to predict cooking and eating quality models: a novel breeding tool to predict texture" [1] which provides solution to this problem. The paper compiles all the pasting, starch structure, sensory and routine quality data of the rice sample used in the article into graphical form. It also shows how the data were processed and obtained.

Measuring and Modeling of Melt Viscosity for Drug Polymer Mixtures.

Project description:Melt viscosity is an essential property in pharmaceutical processes such as mixing, extrusion, fused deposition modeling, and melt coating. Measuring and modeling of the melt viscosity for drug/polymer mixtures is essential for optimization of the manufacturing process. In this work, the melt viscosity of nine formulations containing the drug substances acetaminophen, itraconazole, and griseofulvin, as well as the pharmaceutical polymers Eudragit EPO, Soluplus, and Plasdone S-630, were analyzed with a rotational and oscillatory rheometer. The shear rate, temperature, and drug fraction were varied systematically to investigate their influence on viscosity. The results for the pure polymers showed typical shear-thinning behavior and are fundamental for modeling with the Carreau and Arrhenius approaches. The investigations of the viscosity of the drug/polymer mixtures resulted in a plasticizing or a filler effect, depending on the type of drug and the phase behavior. A drug shift factor was proposed to model the change in viscosity as a function of the drug fraction. On this basis, a universal model to describe the melt viscosity of drug/polymer mixtures was developed, considering shear rate, temperature, and drug fraction.

Viscosity of ring polymer melts.

Project description:We have measured the linear rheology of critically purified ring polyisoprenes, polystyrenes and polyethyleneoxides of different molar masses. The ratio of the zero-shear viscosities of linear polymer melts η0,linear to their ring counterparts η0,ring at isofrictional conditions is discussed as function of the number of entanglements Z. In the unentangled regime η0,linear/η0,ring is virtually constant, consistent with the earlier data, atomistic simulations, and the theoretical expectation η0,linear/η0,ring=2. In the entanglement regime, the Z-dependence of rings viscosity is much weaker than that of linear polymers, in qualitative agreement with predictions from scaling theory and simulations. The power-law extracted from the available experimental data in the rather limited range 1<Z<20, η0,linear/η0,ring ~ Z1.2±0.3, is weaker than the scaling prediction (η0,linear/η0,ring ~ Z1.6±0.3 ) and the simulations (η0,linear/η0,ring ~ Z2.0±0.3 ). Nevertheless, the present collection of state-of-the- art experimental data unambiguously demonstrates that rings exhibit a universal trend clearly departing from that of their linear counterparts, and hence it represents a major step toward resolving a 30-year old problem.

Mutations in sorghum SBEIIb and SSIIa affect alkali spreading value, starch composition, thermal properties and flour viscosity.

Project description:Key messageSeven novel alleles of SBEIIb and one allele of SSIIa co-segregated with the ASV phenotype and contributed to distinct starch quality traits important for food-processing applications. Sorghum is an important food crop for millions of people in Africa and Asia. Whole-genome re-sequencing of sorghum EMS mutants exhibiting an alkali spreading value (ASV) phenotype revealed candidate SNPs in Sobic.004G163700 and Sobic.010G093400. Comparative genomics identified Sobic.010G093400 as a starch synthase IIa and Sobic.004G163700 as a starch branching enzyme IIb. Segregation analyses showed that mutations in Sobic.010G093400 or Sobic.004G163700 co-segregated with the ASV phenotype. Mutants in SSIIa exhibited no change in amylose content but expressed lower final viscosity and lower starch gelatinization temperature (GT) than starches from non-mutant plants. The sbeIIb mutants exhibited significantly higher amylose levels and starch GT and lower viscosity compared to non-mutant starches and ssIIa mutants. Mutations in SBEIIb had a dosage-dependent effect on amylose content. Double mutants of sbeIIb and ssIIa resembled their sbeIIb parent in amylose content, starch thermal properties and viscosity profiles. These variants will provide opportunities to produce sorghum varieties with modified starch end-use qualities important for the beer brewing and baking industries and specialty foods for humans with diabetes.

Appropriate microwave improved the texture properties of quinoa due to starch gelatinization from the destructed cyptomere structure.

Project description:Texture characteristics of quinoa under microwave (MW) irradiation were studied from the perspective of starch gelatinization. MW reduced the light transmittance and increased the hardness and stickiness of quinoa. Microstructure showed that MW dispersed the vesicular structure of starch aggregates into separate starch particles, resulting in the full hydration of starch and water molecules to form denser network structures. The value of peak viscosity and setback decreased in RVA after MW treatment, but the gelatinization temperature remained stable. DSC further proved that moderate MW treatment could reduce the gelatinization enthalpy of starch and made quinoa accessible to gelatinize. However, XRD showed that the crystal structure of starch was preserved, but the crystallinity increased. Finally, low field NMR showed that moderate MW stimulated the full hydration of starch to form denser network structures, while excessive MW treatment made starch partially gelatinize and form rigid structure, resulting in negative texture properties.

Effect of protein addition in properties of gels produced with jackfruit (<i>Artocarpus integrifolia</i>) seed starch: rheological and texture properties.

Project description:Starches and proteins are two major types of biopolymer components in many foods. The interactions of protein with starches greatly influence the matrix structure and properties of starch-based food systems. In this study, the physical-chemical properties and the effect of the commercial whey protein concentrate in the texture and rheological properties of jackfruit starch gels were evaluated. The experimental design was completely randomized, using a 4 × 4 complete factorial scheme, with four levels of starch (3, 6, 9 and 12%) and four levels of protein (0, 2, 4 and 6%). In higher concentrations of starch the addition of proteins delayed the beginning of gelatinization, led to an increase in G' and G″ and decrease in the tan (δ) values, characterizing the gel as strong, e.g., the gel network became more structured. However, in the treatment with 6% starch the addition of protein led to a decrease in gel strength. For gels with 9% starch the increase in protein concentration, led a slight increase in the hardness and cohesiveness, characterizing a more rigid and cohesive gel. Overall, gels with 3 and 6% of starch showed characteristic behavior of a weak gel and with 9 and 12% of strong gel.Supplementary informationThe online version contains supplementary material available at 10.1007/s13197-023-05793-1.

Rheological and Mechanical Properties and Spinning Behavior of a Starch-Based Biodegradable Polymer.

Project description:Over the last few years, the interest in biodegradable polymers has been increasing for several reasons, mainly because of the concerns about environmental protection and the reduction of emissions, especially those related to non-renewable fossil-based resources. Therefore, special attention has increased for the development of environment-friendly polymers such as biodegradable/compostable polymers, especially when they come from renewable resources, since this would help in further reducing energy consumption during their life cycle, as well as the overall environmental impact. Thus, every biopolymer should be accurately investigated in terms of its processability and main technological properties in order to find the most suitable applications. In this work, a starch-derived MaterBi® sample was characterized from the rheological and mechanical point of view, with particular focus on its ability to be processed under non-isothermal elongational flow. The role of processing parameters, such as the temperature and humidity content, was investigated, and a significant influence was found from the processing temperature. Fiber spinning was also performed, finding a good spinnability of the extrudates; in this context, the influence of the draw ratio was investigated as well, with significant effects on the main mechanical properties of the fibers.

A 3D texture dataset of 27 km road.

Project description:This dataset represents the 3D road surface texture of a route of 27 km long in a resolution of 0.1 m approximatively in both longitudinal and transversal directions. The first purpose of the dataset is to test numerical programs that need road surface topographies as input. The dataset is composed of 2658 text files and each representing a section of that route. The data was collected with the Harris2, a vehicle operated by TRL (Transport Research Laboratory from the UK), equipped with a LiDAR (Light Detection and Ranging) and a PPS (Road-Profile System). The files are presented in a regular grid achieved by merging the LIDAR and the PPS data into 3D coordinates.

Controlling photophysical properties of ultrasmall conjugated polymer nanoparticles through polymer chain packing.

Project description:Applications of conjugated polymer nanoparticles (Pdots) for imaging and sensing depend on their size, fluorescence brightness and intraparticle energy transfer. The molecular design of conjugated polymers (CPs) has been the main focus of the development of Pdots. Here we demonstrate that proper control of the physical interactions between the chains is as critical as the molecular design. The unique design of twisted CPs and fine-tuning of the reprecipitation conditions allow us to fabricate ultrasmall (3.0-4.5 nm) Pdots with excellent photostability. Extensive photophysical and structural characterization reveals the essential role played by the packing of the polymer chains in the particles in the intraparticle spatial alignment of the emitting sites, which regulate the fluorescence brightness and the intraparticle energy migration efficiency. Our findings enhance understanding of the relationship between chain interactions and the photophysical properties of CP nanomaterials, providing a framework for designing and fabricating functional Pdots for imaging applications.

Long-term straw return improves cooked <i>indica</i> rice texture by altering starch structural, physicochemical properties in South China.

Project description:Straw return can improve rice eating quality by modifying starch formation from long-term field trials, whereas the relevant mechanisms are still unknown. A long-term field experiment, including straw removal (CK), straw burning return (SBR), and straw return (SR) was conducted to investigate the starch structure, physicochemical properties, and cooked rice textures of indica early- and late-rice. Compared with CK, SBR and SR enhanced relative crystallinity, amylopectin long chains in both rice seasons, and gelatinization temperatures in late rice. Compared to SBR, SR decreased protein content and amylopectin short chains but increased starch branching degree, breakdown, and stickiness, ultimately contributing to improved starch thermal and pasting properties. Meanwhile, SR decreased hardness, cohesiveness, and chewiness, resulting in cooked texture meliorated, which was mainly attributed to amylopectin chain length and starch granule size. The results suggest that SR increased cooked texture of indica rice by altering starch structural and physicochemical properties.

A multimodal tactile dataset for dynamic texture classification.

Project description:Reproducing human-like dexterous manipulation in robots requires identifying objects and textures. In unstructured settings, robots equipped with tactile sensors may detect textures by using touch-related characteristics. An extensive dataset of the physical interaction between a tactile-enable robotic probe is required to investigate and develop methods for categorizing textures. Therefore, this motivates us to compose a dataset from the signals of a bioinspired multimodal tactile sensing module while a robotic probe brings the module to dynamically contact 12 tactile textures under three exploratory velocities. This dataset contains pressure, acceleration, angular rate, and magnetic field variation signals from sensors embedded in the compliant structure of the sensing module. The pressure signals were sampled at 350 Hz, while the signals of the other sensors were sampled at 1500 Hz. Each texture was explored 100 times for each exploratory velocity, and each exploratory episode consisted of a sliding motion in the x and y directions tangential to the surface where the texture is placed. The total number of exploratory episodes in the dataset is 3600. The tactile texture dataset can be used for any project in the area of object recognition and robotic manipulation, and it is especially well suited for tactile texture reconstruction and recognition tasks. The dataset can also be used to study anisotropic textures and how robotic tactile exploration has to consider sliding motion directions.
