Optimization of spray drying conditions namely inlet air temperature (IAT) and maltodextrin (MD) concentration was utilized by response surface methodology for Japanese apricot (<i>Prunus mume</i> Sieb. et Zucc.) juice powder (JAJP) manufacture.
