Project description:Food production is associated with significant environmental impacts. To reduce these, it is first essential to better understand the environmental implications of production processes, and how these can vary among different products. Historically, most studies in this area have focused on comparing environmental impacts among different food categories, but here, we chose to investigate differences at a finer scale, among products belonging to the same category. Cheese was selected as our study model because it is one of the most popular types of food products around the world but is associated with significant environmental impacts. Specifically, we used Life Cycle Assessment (LCA) to evaluate the environmental impacts of 44 French cheeses that benefit from Protected Designation of Origin (PDO) certification. Our assessments took into account all steps from milk production to the end of the ripening period and the functional unit used was 1 kg of fully ripened cheese. Inventories for milk production were obtained from AGRIBALYSE 3.0. Data on cheeses production stage were collected using PDO specifications, technical datasheets, scientific literature, and three expert opinions. Background inventories (electricity mix, gas production, materials, transport, water, cleaning products) were obtained from the Ecoinvent 3.6 database. Simapro software was used to conduct all LCAs, using the characterization method "EF 3.0 Method (adapted) V1.00 / EF 3.0 normalisation and weighting set". Our final dataset contains details on products, life cycle inventories (LCI), and LCIA results. These data could be useful for cheesemakers seeking to improve the environmental performance of their products.

Bacterial Community of Grana Padano PDO Cheese and Generical Hard Cheeses: DNA Metabarcoding and DNA Metafingerprinting Analysis to Assess Similarities and Differences.

Project description:The microbiota of Protected Designation of Origin (PDO) cheeses plays an essential role in defining their quality and typicity and could be applied to protect these products from counterfeiting. To study the possible role of cheese microbiota in distinguishing Grana Padano (GP) cheese from generical hard cheeses (HC), the microbial structure of 119 GP cheese samples was studied by DNA metabarcoding and DNA metafingerprinting and compared with 49 samples of generical hard cheeses taken from retail. DNA metabarcoding highlighted the presence, as dominant taxa, of Lacticaseibacillus rhamnosus, Lactobacillus helveticus, Streptococcus thermophilus, Limosilactobacillus fermentum, Lactobacillus delbrueckii, Lactobacillus spp., and Lactococcus spp. in both GP cheese and HC. Differential multivariate statistical analysis of metataxonomic and metafingerprinting data highlighted significant differences in the Shannon index, bacterial composition, and species abundance within both dominant and subdominant taxa between the two cheese groups. A supervised Neural Network (NN) classification tool, trained by metagenotypic data, was implemented, allowing to correctly classify GP cheese and HC samples. Further implementation and validation to increase the robustness and improve the predictive capacity of the NN classifier will be needed. Nonetheless, the proposed tool opens interesting perspectives in helping protection and valorization of GP and other PDO cheeses.

Project description:Protected Designation of Origin cheeses are products with high-quality standards that can claim higher prices on the market. For this reason, non-PDO cheeses with lower quality can be mislabeled as PDO or mixed with it for economic gain especially when the product is in a shredded form. Luckily, the production of PDO cheese is subjected to strict procedural specification rules that result in a product with a defined profile of its metabolites, which can be used for authentication purposes. In this study, an NMR metabolomic approach combined with multivariate analysis was implemented to build a classification model able to discriminate PDO Grana Padano cheese from a large dataset of competitors. The great advantage of the proposed approach is a simple sample preparation, obtaining a holistic overview of the analyzed samples. The untargeted approach highlighted a "typical profile" of Grana Padano samples, which could be used for protection purposes. In parallel, the targeted results allowed us to identify potential chemicals, such as lactate, some amino acids and lipids. These initial results could open the road to a potential new additional tool to check the authenticity of PDO cheeses in the future.
