A polymerase chain reaction-restriction fragment length polymorphism (PCR-RFLP) analysis of 16S ribosomal RNA (rRNA) genes was developed to identify lactic acid bacteria (LAB) that are commonly present in winemaking processes (<i>Oenococcus, Pediococcus, Lactobacillus</i>, and <i>Leuconostoc</i>).
