A validated survey to measure household food waste.

ABSTRACT: To assess household food waste in large-scale studies with the aim to understand differences in food waste levels between households, surveys are often employed. Yet, survey measures rely on people's awareness of their own food waste levels, draw upon their memory of instances of food waste, and can be subject to social desirability. Therefore, existing survey measures may not be optimal in measuring household food waste. The Household Food Waste Questionnaire has been developed to ameliorate these issues. It uses a pre-announcement to increase awareness of food waste, focuses on a short and specific time period (i.e. the past week), and specifies detailed product categories, whereas previous surveys mostly used general questions without reference to time period or product category. The amount of household food waste estimated using the Household Food Waste Questionnaire is likely to considerably underestimate the actual amount, so the method should not be used to obtain accurate waste amounts, but rather to distinguish differences between households and/or across time. Advantages compared to existing survey methods are that it: •Distinguishes better between households with low versus high levels of food waste•Correlates more highly with other measurements of household food waste (diary, kitchen caddy, photograph coding).

Project description:IntroductionFood waste (FW) represents a significant social and environmental problem, with 1.3 billion tons of food wasted yearly worldwide. Even if consumers are increasingly aware of the phenomenon, it remains relevant, and understanding the behaviors of specific target audience segments appears instrumental to the planning of effective interventions. To this end, we designed an observational study to investigate, throughout an online questionnaire, FW-related habits of university students in a Southern Italian region.MethodsA representative sample of 431 students from the University of Catanzaro Magna Graecia completed an online survey aimed at investigate FW related behaviors. A descriptive analysis was performed on the whole cohort, and a formal statistical analysis was carried out after excluding responders who had not correctly followed the survey instructions (n = 85). Differences were assessed by chi square (χ 2) tests. A food wasting score was generated, and differences in the score values were analyzed by Student T-test. Linear and multiple regression analyses were performed to identify factors contributing to the score.ResultsOverall, the results of our survey show a high prevalence of virtuous behaviors in the food purchasing phase; while, at home, less than 50% of respondents apply easy-to-implement waste prevention rules. The statistical analysis showed that the major determinants of FW were: no direct involvement in grocery shopping and male gender. Indeed, even if we observed several significant differences comparing subgroups based on established or putative determinants of FW behaviors, none survived matching for group size, gender and relevant food managing (shopping, storing, cooking) habits. The only exception was the more appropriate handling of "use by" products by respondents who received structured nutrition teaching, as opposed to students whose academic courses do not include this subject (adjusted p = 0.008).ConclusionOur data suggest that young adults are trying to implement strategies to reduce FW, even if there is room for improvement, particularly in the storage phase. Extending nutrition education to all university programs may be helpful in reaching this goal.

Project description:To target food security interventions for smallholder households, decision makers need large-scale information, such as maps on poverty, food security and key livelihood activities. Such information is often based on expert knowledge or aggregated data, despite the fact that food security and poverty are driven largely by processes at the household level. At present, it is unclear if and how household level information can contribute to the spatial prediction of such welfare indicators or to what extent local variability is ignored by current mapping efforts. A combination of geo-referenced household level information with spatially continuous information is an underused approach to quantify local and large-scale variation, while it can provide a direct estimate of the variability of welfare indicators at the most relevant scale. We applied a stepwise regression kriging procedure to translate point information to spatially explicit patterns and create country-wide predictions with associated uncertainty estimates for indicators on food availability and related livelihood activities using household survey data from Uganda. With few exceptions, predictions of the indicators were weak, highlighting the difficulty in capturing variability at larger scale. Household explanatory variables identified little additional variation compared to environmental explanatory variables alone. Spatial predictability was strongest for indicators whose distribution was determined by environmental gradients. In contrast, indicators of crops that were more ubiquitously present across agroecological zones showed large local variation, which often overruled large-scale patterns. Our procedure adds to existing approaches that often only show large-scale patterns by revealing that local variation in welfare is large. Interventions that aim to target the poor must recognise that diversity in livelihood activities for income generation within any given area often overrides the variability of livelihood activities between distant regions in the country.
