The impact of different amounts (2%, 4% and 6%) of enoki (<i>Flammulina velutipes</i>) mushroom stem waste (MSW) powder on the physicochemical quality, color and textural, oxidative stability, sensory attributes and shelf-life of goat meat nuggets was evaluated.
