Consumers' attention on identification, nutritional compounds, and safety in heavy metals of Canadian sea cucumber in Chinese food market.

ABSTRACT: Background: Based on the consumers' attention issues of sea cucumbers, we aimed to complete comprehensive information of commercial Canadian sea cucumbers (CCSC), which sprang up extensively in Chinese food market.

Results: CCSC were identified as Cucumaria frondosa and characterized based on the characteristics, nutritional compositions, and heavy metals. The abdomen and five internal tendons of Cucumaria frondosa were special orange. The average of soaking degree and water content, which consumers paid great attention to, was 2.8 ± 0.3 and 0.46 ± 0.09%, respectively. Proteins (56.4 ± 9.1%) and polysaccharides (12.2 ± 14.7%) were the principal nutrient component. In addition, there was a variety of free amino acids, in which arginine (70.1 ± 50.0 mg/100 g), glutamate (42.6 ± 23.9 mg/100 g), and alanine (32.2 ± 21.0 mg/100 g) were the main components. Phosphorus (P, 0.26 ± 0.05%), magnesium (Mg, 0.19 ± 0.07%), and kalium (K, 0.17 ± 0.08%) were the major mineral elements. Amount of heavy metal was within the safety limitation (5.5 ± 1.4 mg/kg). Furthermore, the active ingredients were positively correlated with size.

Conclusion: The overall findings enriched the information of Cucumaria frondosa for consumers and suggested that the quality of Cucumaria frondosa was varied following commercial classification and size.

Project description:BackgroundEvidence has indicated that some non-inherited factors such as exposure to environmental pollutants are associated with neurodevelopment disorders like autism spectrum disorder (ASD). Studies report that endocrine disrupting compounds (EDCs), including polychlorinated biphenyls, organochlorine pesticides, perfluoroalkyl substances (PFAS), and some metals, have adverse effects on the fetal neurodevelopment. The aim of this study was to measure the amniotic fluid (AF) levels of EDCs and metals as well as the receptor transactivities induced by AF and investigate the possible link between prenatal exposure to EDCs and heavy metals and ASD risk.MethodsIn this case-control study, we included AF samples of 75 ASD cases and 135 frequency-matched controls and measured the levels of the endogenous sex hormones, PFAS, and elements including heavy metals. The combined effect of endogenous hormones and EDCs on the receptor of estrogen (ER), androgen (AR), aryl hydrocarbon (AhR), and thyroid hormone-like activity were also determined and expressed as receptor ligand equivalents. We assessed the associations of AF levels of chemicals, sex hormones, and receptor activities with ASD risk using unconditional logistical regression analyses. To control for multiple comparisons, the false discovery rate (FDR) was used and q values less than 0.25 were designated as statistical significance.ResultsPFAS and metals were detectable in AF samples. The ASD cases had significantly lower AF levels of PFAS than controls, and the adjusted odds ratio (OR) was 0.410 (95% CI 0.174, 0.967; p?=?0.042; FDR q value?=?0.437) for perfluorooctane sulfonate (PFOS). The principal component, including PFAS congeners, copper, iron, and estrogenic activity, was significantly inversely associated with ASD risk (adjusted OR?=?0.100; 95% CI 0.016, 0.630; p?=?0.014; FDR q value?=?0.098).Testosterone level in AF weakly associated with ASD risk (adjusted OR?=?1.002; 95% CI 1.000, 1.004; p?=?0.05). However, after multiple comparison correction, the association was not significant (FDR q value?=?0.437). No significant associations between AF-induced receptor transactivities and ASD risk were observed. The adjusted OR was 2.176 (95%CI 0.115, 41.153) for the ratio of the combined androgenic activity to combined estrogenic activity.ConclusionsThe presence of PFAS and heavy metals in AF indicates that they can cross the placenta. The inverse association between levels of PFAS congeners in AF and ASD risk might relate to the weak estrogenic activities and anti-androgenic activities of PFAS.The observed tendency of positive association between the ratio of combined androgenic effect to the combined estrogenic effect and ASD risk needs further studies to explore whether EDCs together with endogenous hormones play a role in the development of ASD.

Project description:Background:Aquatic pollution by heavy metals has become a global problem and is of great concern due to the detrimental effects on aquatic ecosystems and possible human uptake. Objectives:The present study aimed to evaluate tissue bioaccumulations of heavy metals and possible human health risks in addition to associated cellular damages in fish for sale in a fish market in Abuja, Nigeria. Methods:Clarias gariepinus sold at the Kado Fish Market in Abuja, Nigeria, in March-April 2017 and March-April 2018 were randomly purchased and sampled. The heavy metal contents of the sampled fish were assayed and used to assess the extent of potential health risks to human consumers. The extent of histopathological changes associated with the bioaccumulations in the sampled fish were also evaluated according to standard procedures. Results:Levels of most heavy metals were above permissible limits, except for lower levels of zinc (Zn) in liver and muscle and higher levels of lead (Pb) in muscle in the sampled fish. Similarly, significant (p<0.05) liver bioaccumulation occurred for Zinc (Zn), chromium (Cr), iron (Fe), and copper (Cu) compared to their levels in muscle. The total hazard index (non-cancer risk across all metals) was 0.0415, which is very low and acceptable. The cancer risks ranged between the acceptable values of 1.98 × 10-5 - 3.71 × 10-6. Associated histopathological changes, which occurred in the sampled fish, differed between the various assayed tissues. Conclusions:Most of the heavy metals were significantly bioaccumulated (p<0.05) and were above the permissible levels, particularly in liver samples. The levels of muscle heavy metal bioaccumulation in the sampled fish posed no apparent cancer or non-cancer health risks to human consumers. However, further efforts are needed to minimize heavy metal aquatic environmental pollution to safeguard the health of aquatic flora and fauna and human consumers because of the tendency of these pollutants to persist and bioaccumulate to toxic levels over time.
