Fourteen different <i>Pleurotus ostreatus</i> cultivars (Po_1-Po_14) were tested for free amino acid content (fAA), total polyphenol content (TPC), and antioxidant capacity (Ferric Reducing Ability of Plasma-FRAP) to select the cultivars with the most favorable traits.
