Betalains are water-soluble pigments present in vacuoles of plants of the order <i>Caryophyllales</i> and in mushrooms of the genera <i>Amanita</i>, <i>Hygrocybe</i> and <i>Hygrophorus</i>. Betalamic acid is a constituent of all betalains. The type of betalamic acid substituent determines the class of betalains.
