Project description:Our previous study suggested that supplementation of high-grain diets with ruminally protected and non-protected active dried yeast (ADY) may potentially reduce manure pathogen excretion by feedlot cattle. We hypothesized that feeding ruminally protected ADY might change the fecal bacterial community of finishing cattle. The objective of this study was to investigate the effects of feeding ruminally protected and non-protected ADY to finishing beef steers on their fecal bacterial community. Fresh fecal samples were collected on day 56 from 50 steers fed one of five treatments: 1) control (no monensin, tylosin, or ADY), 2) antibiotics (ANT, 330 mg monensin + 110 mg tylosin·steer-1d-1), 3) ADY (1.5 g·steer-1d-1), 4) encapsulated ADY (EDY; 3 g·steer-1d-1), and 5) a mixture of ADY and EDY (MDY; 1.5 g ADY + 3 g EDY·steer-1d-1). Bacterial DNA was extracted from fecal samples and sequenced using a MiSeq high-throughput sequencing platform. A total number of 2,128,772 high-quality V4 16S rRNA sequences from 50 fecal samples were analyzed, and 1,424 operational taxonomic units (OTU) were detected based on 97% nucleotide sequence identity among reads, with 769 OTU shared across the five treatments. Alpha diversity indices, including species observed, Chao estimate, abundance-based coverage estimator, Shannon, Simpson, and coverage, did not differ among treatments, and principal coordinate analysis revealed a high similarity among treatments without independent distribution. Bacteroidetes and Firmicutes were dominant phyla in the fecal bacterial community for all treatments, with a tendency (P < 0.10) for greater relative abundance of Bacteroidetes but lesser Firmicutes with ANT, EDY, and MDY compared with control steers. Prevotella was the dominant genus in all treatments and steers supplemented with ANT, EDY, and MDY had greater (P < 0.05) relative abundance of Prevotella than control steers, but lesser (P < 0.03) relative abundance of Oscillospira. No differences between ADY and control were observed for the aforementioned variables. Fecal starch contents were not different among treatments, but the relative abundance of Bacteroidetes, as well as Prevotella at genera level, tended (P < 0.06) to be positively correlated to fecal starch content. We conclude that supplementing ruminally protected or non-protected ADY or ANT had no effect on diversity and richness of fecal bacteria of finishing beef cattle, whereas feeding protected ADY or ANT to finishing beef steers altered the dominant fecal bacteria at phylum and genus levels. Therefore, supplementation of ruminally protected ADY may potentially improve intestinal health by stimulating the relative abundance of Prevotella.

Project description:Single-pass corn stover harvest is a method whereby combine harvester tailings consisting of cob, stalk, leaf, husk, and tassel fractions are collected and baled without coming into contact with soil. The objective was to feed beef steers diets that included a roughage component consisting of harvested corn residue in chopped form from conventional corn stover bales (CST) or single-pass bales (SPB) to assess intake selectivity of corn stover fractions and estimate net energy values of these corn stovers. Whole plant corn silage served as the control roughage in the control diet (CSIL). Steers (n = 90, 5 pens per treatment) were fed during Grow (84 d) and Finish (66 d) trials. Steers sorted through corn stover during both trials and consumed 52.5% of corn stover offered and 40% of cob offered. Intake of SPB cob was 2.6-fold and 3.3-fold greater than CST cob intake (P < 0.01) in Grow and Finish trials, respectively, indicating that when more cob was available, cattle consumed more. During the Grow trial, stover intake tended (P = 0.07) to be lower for SPB and diet dry matter intake (DMI) was less (P ≤ 0.05) for SPB, which may be due to the elevated cob intake by SPB steers. Across treatments, stover DMI was similar in the Grow (1.10 kg per steer per d) and Finish (1.11 kg per steer per d) trials. The proportion (65%) of Fines (<8 mm) consumed from the Grow diet (40% neutral detergent fiber, aNDF) was greater than the Finish diet (25% aNDF; 18% to 31%) and gleaning of concentrate feeds from orts seemed to be more extensive in the Grow diet. Steers consuming Finish diets containing SPB and CST had DMI that were 17% and 18%, respectively, greater (P ≤ 0.05) than CSIL, an indication of compensatory intake. The physical effectiveness factors for stovers fed in the Grow and Finish diets were 0.85 and 0.95, respectively. Estimates for net energy maintenance and net energy gain (NEg), respectively, using National Research Council methods from 2001 were as follows for consumed stovers: SPB (1.09 and 0.54 Mcal/kg) and CST (0.98 and 0.44 Mcal/kg) in the Grow trial, and SPB (0.96 and 0.42 Mcal/kg) and CST (0.95 and 0.40 Mcal/kg) in the Finish trial. Although SPB and CST differ in botanical fraction composition and net intakes of botanical fractions, their energetic contributions to steer performance were very similar. Steers fed the Finish diet (1.25 Mcal performance-adjusted NEg per kg) selected stover botanical components to achieve a diet composition of 25% aNDF.

Project description:This study was designed to evaluate the effect of silage source (barley vs. wheat silage) when harvested at two chop lengths (low vs. high physically effective neutral detergent fiber [peNDF]) and when barley silage was partially replaced with straw to increase the undigested neutral detergent fiber (uNDF) concentration on performance and carcass characteristics of finishing steers. Four hundred and fifty yearling commercial crossbred steers with an initial body weight (BW) of 432 ± 30.5 kg were allocated to 30 pens and fed diets containing 90% concentrate:10% forage for 123 d in a completely randomized block design with a 2 × 2 + 1 factorial arrangement. Treatments included 1) barley silage (BarS) with low peNDF (LpeNDF); 2) BarS with high peNDF (HpeNDF); 3) BarS with straw to yield a diet with LpeNDF + uNDF; 4) wheat silage (WhS) LpeNDF; and 5) WhS HpeNDF. There were no silage × peNDF interactions for dry matter intake (DMI), average daily gain (ADG), or gain to feed ratio (G:F), but cattle fed WhS LpeNDF had a lower (P < 0.01) proportion of yield grade 3 and a greater proportion in yield grade 2 carcasses than cattle fed BarS LpeNDF or HpeNDF and WhS HpeNDF. Cattle fed WhS LpeNDF had greater (P = 0.02) incidence of severe liver abscesses when compared with cattle fed BarS LpeNDF or HpeNDF and WhS HpeNDF. Cattle fed BarS consumed less (P < 0.01) uNDF as a percentage of BW, had increased (P = 0.02) ADG, heavier (P = 0.02) hot carcass weight, with greater (P = 0.01) back fat thickness, and (P < 0.01) incidence of minor liver abscesses when compared with cattle fed WhS. Feeding HpeNDF did not affect DMI, ADG, or G:F, but increased (P = 0.02) marbling score and reduced (P < 0.01) the proportion AA quality grade and increased (P < 0.01) those classified as AAA when compared with cattle fed LpeNDF. Cattle fed low uNDF had lesser (P < 0.01) uNDF intake as a percentage of BW, greater dressing percentage (P = 0.01), had a lower (P < 0.01) proportion of carcasses in yield grade 2, and a greater (P < 0.01) proportion of carcasses in yield grade 3 when compared with cattle fed high uNDF. Thus, silage source, peNDF, and uNDF content do not impact DMI or G:F when diets contain 10% forage, but BarS relative to WhS as well strategies increasing the peNDF concentration may increase ADG, HCW, back fat thickness, dressing percentage, marbling score, and carcasses classified as quality grade AAA. Future research is needed to evaluate the usefulness of peNDF and uNDF in rations for finishing cattle.

Project description:The objective of this study was to evaluate the effects of supplementing the diet of finishing beef steers with active dried yeast (ADY) in ruminally protected and nonprotected forms on growth performance, carcass traits, and immune response. Seventy-five individually-fed Angus steers (initial body weight (BW) ± SD, 448 ± 8.4 kg) were assigned to a randomized complete design with 5 treatments: 1) control (no monensin, tylosin, or ADY), 2) antibiotics (ANT, 330 mg monensin + 110 mg tylosin·steer-1d-1), 3) ADY (1.5 g·steer-1d-1), 4) encapsulated ADY (EDY; 3 g·steer-1d-1), and 5) a mixture of ADY and EDY (MDY; 1.5 g ADY + 3 g EDY·steer-1d-1). Active dried yeast with 1.7 × 1010 cfu/g was encapsulated in equal amounts of ADY and capsule materials (stearic acid and palm oil). Steers were fed a total mixed ration containing 10% barley silage and 90% barley-based concentrate mix (dry matter [DM] basis). The ANT, ADY, and EDY were top-dressed daily to the diet at feeding. Intake of DM, final BW, averaged daily gain (ADG), and gain-to-feed ratio (G:F) were unaffected by ADY or EDY. Carcass traits including hot carcass weight (HCW), dressing percentage, marbling score and quality grade did not differ among treatments, although fewer severely abscessed livers were observed (P < 0.05) with ADY and MDY compared with the other treatments. Plasma urea N tended (P < 0.10) to be greater in steers fed ANT, ADY, or EDY on day 56 and 112, while glucose remained stable in all treatments except greater (P < 0.02) plasma glucose occurred in steers fed MDY on day 112. Serum nonestrified fatty acid (NEFA) was unaffected by ADY or EDY, but it was greater (P < 0.03) in steers fed ANT compared with control. Plasma haptoglobin (Hp) and serum amyloid A (SAA) were affected by yeast supplementation on day 112, with greater (P < 0. 01) Hp in steers fed ADY, EDY, or MDY and lesser (P < 0.01) SAA in steers fed EDY and MDY than control. Lipopolysaccharide binding protein concentrations were greater (P < 0.01) in steers fed EDY and MDY on day 56. Supplementing with ADY (protected or nonprotected) or ANT had no effect on fecal IgA contents on day 56 and 112. Steers fed yeast (EDY or MDY) tended (P < 0.10) to have fewer fecal Escherichia coli counts than the control and ANT on day 56 and 112. These results indicate that feeding ADY to feedlot cattle may exhibit antipathogenic activity that conferred health and food safety beneficial effects including reduced liver abscess and potentially pathogen excretion, thus yeast may be an alternative to in-feed antibiotics in natural beef cattle production systems.

Project description:Dairy herds are mating a portion of cows to beef cattle semen to create a value-added calf. Objectives of this study were to compare the feedlot performance and carcass characteristics of beef × Holstein steers by breed when sires represented bulls with commercially available semen. Three groups of single-born, male calves (n = 262) born to Holstein dams on 10 Pennsylvania dairies were sourced during 3 yr. Steers were sired by seven beef breeds: Angus, Charolais, Limousin, Hereford, Red Angus, Simmental, and Wagyu. Steers were picked up within a week of age and raised at two preweaned calf facilities until weaning (8 ± 1 wk of age) under similar health and management protocols. Steers were then transported to a commercial calf growing facility where they were managed as a single group until 10 ± 2 mo of age when they were moved to be finished at the Pennsylvania Department of Agriculture's Livestock Evaluation Center feedlot. Groups of steers were selected for slaughter based on body weight. Carcass characteristics were evaluated by trained personnel and a three-rib section of the longissimus muscle (LM) was collected from each carcass for Warner-Bratzler shear force (WBSF) evaluation and intramuscular fat determination. Steers sired by all sire breeds except for Limousin had greater average daily gain (ADG; 1.62 to 1.76 kg/d) than Wagyu × Holstein steers (1.39 kg/d; P < 0.05). Angus-sired steers had an 8.6% greater ADG than Red Angus-sired steers (P < 0.05). Angus, Charolais (1.73 kg/d), and Simmental-sired steers (1.68 kg/d) also had greater ADG than Limousin-sired steers (1.55 kg/d; P < 0.05). Wagyu × Holstein steers spent 5 to 26 more days on feed (P < 0.05) than Limousin × Holstein, Simmental × Holstein, Angus × Holstein, and Charolais × Holstein steers. Angus and Charolais-sired steers were also on feed for 19 and 21 d fewer, respectively, than Limousin-sired steers (P < 0.05). Red Angus-sired steers had greater marbling scores than Simmental and Limousin-sired steers and Angus and Charolais-sired steers had greater marbling scores than Limousin-sired steers (P < 0.05). Angus, Limousin, and Hereford-sired steers produced the most tender LM as evaluated by WBSF; Angus-sired carcasses (3.82 kg) were more tender than Charolais (4.30 kg) and Simmental-sired carcasses (4.51 kg; P < 0.05). Limousin and Hereford-sired steers (3.70 and 3.83 kg, respectively) also had more tender steaks than Simmental-sired steers.

Project description:To characterize carcass and meat attributes, such as beef eating quality in specific farming conditions, 31 young grass-fed crossbred Angus x Salers cattle in two farming systems (a mono-cattle system versus a mixed system with beef cattle and sheep) were used in this study. Three muscle cuts (striploin-m. longissimus dorsi et thoracis; bolar blade-m. triceps brachii caput longum; internal flank plate-m. obliquus internus abdominis) were used for consumer eating quality testing and striploin was used for panelist eating quality assessment, and objective measurements [Warner-Bratzler shear force (WBSF) and fatty acid (FA) and antioxidant contents]. Results indicated that the farming system had no impact on carcass characteristics or meat quality, but it tended to affect FA content, which is likely explained by between-system differences in animal maturity (assessed by ossification score). Animal gender had significant effects on three eating quality traits evaluated by untrained consumers, with higher flavor liking, overall liking, and overall meat eating quality (MQ4) scores in females than in males. Additionally, FA contents were correlated with sensory quality traits to varying extents: consumer-scored tenderness, flavor, and overall liking were mainly positively correlated with ω-3 and ω-6 polyunsaturated fatty acid (PUFA) contents, and panelist-evaluated tenderness and abnormal flavor were more positively correlated with total lipids, saturated fatty acid (SFA), and monounsaturated fatty acid (MUFA) contents. Overall, this study showed that specific grass-fed crossbred Angus x Salers cattle can produce lean meat rich in ω-3 PUFAs with a low ω-6/ω-3 ratio and with "better than average" beef eating quality.

Project description:ObjectiveThe aim of this study was to determine the effect of pineapple cannery by-product (PCB) level on the growth performance and carcass characteristics of finishing Hanwoo steers.MethodsThe feeding stage was divided into early and late finishing stages. A total of 60 castrated Hanwoo steers (13.9±0.8 months old, 418.8±36.5 kg initial body weight [BW]) were blocked by initial BW and then randomly allotted into 12 pens (five head/pen). The pens were randomly assigned to control (CONT), low PCB (LPCB), or high PCB (HPCB) treatments. These diets contained 0%, 1.5%, or 3.0% of PCB (on a dry matter [DM] basis; as-fed basis was 0%, 10.6%, or 21.2%), respectively.ResultsFor the early finishing stage, body weight gain (BWG) and average daily gain (ADG) of the CONT and LPCB feeding groups were greater (p<0.05) than those of the HPCB feeding group. In addition, there were linear and quadratic effects on BWG and ADG with increasing dietary PCB level (p<0.05). The gain to feed (G:F) ratio tends to quadratically decrease with an increasing PCB level in the early finishing stage (p = 0.076). Growth performances of late finishing stage were not affected by PCB level. The marbling score of the LPCB feeding group was similar to that of the CONT feeding group. However, there was a linear decrease (p< 0.05) in marbling score and quality grade among treatments as PCB was increased in the diet. In the longissimus muscle free amino acid profile, histidine composition increased linearly (p<0.05) with an increasing level of PCB.ConclusionThe level of PCB 1.5% DM in diet can be used for finishing steers without any adverse effects on growth and carcass performances. However, there were some negative effects on growth and carcass performance in the HPCB feeding group.

Project description:This study evaluated the effects of supplementing Ca salts of soybean oil (CSSO) to beef steers at 2 mo of age via creep-feeding, and/or during a 40-d preconditioning period on performance and carcass development responses. A total of 64 steers were enrolled in this study over 2 yr (32 steers per year), with 4 periods each year: creep-feeding (CF; day 0 to 60), preweaning (day 61 to weaning on day 124 and 127 of year 1 and 2, respectively), preconditioning (PC; day 132 to 172 in year 1 and day 135 to 175 of year 2), and feedlot (feedlot arrival to slaughter, day 173 to 378 in year 1 and day 176 to 385 in year 2). On day 0 steers were ranked by body weight (BW) and age (114 ± 4 kg of BW; 66.1 ± 0.9 d of age) and allocated to 1 of 16 pens. Pens were randomly assigned to receive CSSO during CF (80 g/d per steer) and/or PC (150 g/d per steer) in a 2 × 2 factorial arrangement of treatments. During CF and PC, nonsupplemented steers (CON) were provided an isolipidic prilled saturated fat supplement. Steer BW was recorded on day 0, 60, at weaning, and prior to feedlot shipping. Carcass traits were recorded upon slaughter. On day 0, 60, at weaning, prior to feedlot shipping, and during the feedlot period, blood samples were collected and longissimus muscle (LM) biopsies were collected. On day 60, steers that received CSSO during CF had greater (P < 0.01) plasma concentrations of linoleic and ?-6 compared with CON (CF treatment × day; P ? 0.05). Steers that received CSSO during PC had greater (P < 0.01) plasma concentrations of linoleic, ?-6, and total fatty acids compared with CON at feedlot shipping (PC treatment × day; P ? 0.05). A PC treatment × day interaction was also detected (P = 0.04) for mRNA expression of peroxisome proliferator-activated receptor gamma (PPAR-?), which was greater (P = 0.04) at feedlot shipping for steers receiving CSSO during PC. Interactions between CF treatment × day were detected (P ? 0.01) for mRNA expression of adipocyte fatty acid-binding protein, fatty acid synthase, PPAR-?, and stearoyl-CoA desaturase, which were greater (P ? 0.02) in the feedlot in steers receiving CSSO during CF. No treatment differences were detected for (P ? 0.18) performance or carcass traits, including marbling and backfat thickness. Results from this study suggest that supplementing CSSO to suckled beef steers via creep-feeding upregulated mRNA expression of the adipogenic genes investigated herein later in life. These outcomes, however, were not translated into improved carcass quality.

Project description:Copper (Cu) is an essential trace element in the production of swine. This study was conducted to investigate the effect of 3 different sources of Cu on growth performance, Cu metabolism, and intestinal microorganisms of finishing pigs, so as to estimate the bioavailability of the 3 sources for pigs. A total of 42 male finishing pigs (88.74 ± 5.74 kg) were randomly allocated to 7 treatments. The factors were 3 sources (CuSO4, Cu-glycine, Cu-proteinate) and 2 levels (5 and 20 mg/kg) of Cu, plus one negative control treatment (0 mg/kg added Cu level) for the entire 28-d experiment. The average daily gain (ADG) and feed to gain ratio (F:G) both increased when Cu was added. The Cu level in liver, bile, kidney, serum, lung, urine and feces rose (P < 0.001) with increasing dietary Cu level regardless of the source. Meanwhile, pigs receiving organic Cu (glycinate or proteinate) retained more Cu and excreted less Cu than those receiving inorganic Cu (CuSO4), which showed that organic forms were more bioavailable. At the transcriptional level, changes in the level and source of dietary Cu resulted in modulation of transporters. In the jejunal mucosa, import transporter high affinity copper uptake protein 1 (CTR1) and export transporter ATPase copper transporting alpha (ATP7A) in supplemental Cu treatments were down-regulated compared to the control. Also, peptide transporter 1 (PepT1) and lanine-serine-cysteine transporter, type-2 (ASCT2) were significantly (P < 0.01) up-regulated in 20 mg/kg Cu-proteinate and Cu-glycinate treatments, respectively. Microbial diversity was lowest in the 20 mg/kg CuSO4 treatment, and the ratio of Firmicutes to Bacteroidetes was higher in added Cu treatments, especially Cu-glycinate treatment. These results indicate that uptake of different Cu forms is facilitated by different transporters and transport mechanisms, and compared with inorganic Cu, organic Cu provides benefits to intestinal microflora and reduces Cu excretion.

Project description:The objective of this experiment was to determine if supplying additional propionate to the rumen alters dry matter intake (DMI), feeding behavior, glucose metabolism, and rumen fluid metabolites in steers fed a finishing diet. Ruminally cannulated steers (n = 6) were fed a finishing diet ad libitum. Steers were randomly assigned to one of three treatments in a 3 × 6 Latin rectangle design with three 15 d periods. Treatments of no Ca propionate (Control), 100 g/d (Low), or 300 g/d (High) were ruminally dosed twice daily. Individual intake was measured using an Insentec feeding system. Pre-feeding blood samples were collected on day 7 and rumen fluid samples were collected on day 13. An intravenous glucose tolerance test (IVGTT) was conducted on day 14 and liver biopsies were collected on day 15. Liver samples were analyzed for expression of genes involved in gluconeogenesis. Data were analyzed using a mixed model with period, treatment, day, and their interaction included, with day and minute within period as a repeated measure and steer as a random effect. Meal size (P = 0.049), meal frequency (P = 0.046), and DMI (P < 0.001) were decreased in High steers. Day 7 plasma glucose (P = 0.23) and lactate (P = 0.47) were not affected by treatment, but insulin was decreased (P = 0.008) and non-esterified fatty acids were increased (P = 0.044) in the High treatment compared with the Control. Rumen fluid lactate was decreased (P = 0.015) in the High treatment compared with the Low treatment. Total VFA concentrations did not differ (P = 0.88) between treatments. There was treatment × time interaction for proportions of acetate and propionate (P < 0.001) and the acetate:propionate ratio (P = 0.005). The effect on acetate was due to a decrease in the High treatment 2 h after dosing the treatment. Propionate proportions were greater in the High treatment than the Control at all time points and differed from the Low except at 0 h. Propionate treatments had no major effects on the glucose and insulin parameters observed in the IVGTT other than a tendency (P = 0.09) for an increased insulin time to peak. These data indicate that exogenous propionate decreases DMI but the decrease in propionate from fermentation due to reduced DMI might negate the supply of exogenous propionate in VFA supply to the animal. Mechanisms other than hepatic oxidation of propionate might be responsible for DMI regulation.
