PURPOSE:To obtain an alpha-L-aspartyl-L-phenylalanine methyl ester precursor useful as a dietary sweetener, etc., on an industrial scale at a low cost by reacting an N-protected-L-aspartic acid with an L-phenylalanine ester in the presence of an enzyme and an inhibitor of an enzyme to decompose the enzyme.
